WineMaking:
50% de-stemmed and 50% whole-cluster. 1-3-week fermentation over ambient yeasts in open vats with gentle punch-downs and pump-overs.
Aging:
Aged for 20 months in oak barrels (30% new).
Bottling:
Neither fined nor filtered.
