Planted in the 1950s in the commune of Mouzillon over sandy, silico-clay topsoil and gabbro subsoil. Southern exposition. Density of 7000 vines/ha.
Viticulture:
Organic (not certified) employing biodynamic principles. Debudding. Guyot Nantais pruning.
Wine Making:
Whole cluster pneumatic pressing. No debourbage. Fermented over indigenous yeasts. Complete malolactic conversion.
Aging:
Aged for 12 months on lees in 450L barrels and concrete diamond vats. Then blended into glass-lined underground vats for 6 additional months.
Bottling:
Neither fined not filtered.
