Viticulture:
Organic (not certified). Farmed according to the lunar calendar. Guyot and cordon training; high trellising.
WineMaking:
50% whole cluster. Short cold maceration. Then fermented over indigenous. yeasts.
Aging:
Aged for 12 months in barrels (20% new). Then blended and aged for 4 additional months in stainless steel tank.
Bottling:
No fining, minimal filtration.
