Organic (not certified). Ploughing. 6 to 8 brunches of grapes per plant. Guyot-Poussard pruning.

100% de-stemmed. 2-week fermentation over ambient yeasts in open vats.

Aged for 12 months in oak barrels (10% new).

Neither fined nor filtered.
