Vineyard:
Two parcels planted in the 1970’s, one of 0.18 ha owned by Catharina, and another of 0.3 ha., belonging to neighbors. Both parcels are situated in the Beaune lieu-dit Les Prevolles, which is located west of the city of Beaune, just below the Premiers Crus, and bordering on the RN 74. The parcels are flat with heavy clay-limestone soil.
Viticulture:
Organic and biodynamic (not certified). All the farming in the neighbor’s section is done by Catharina since 2024.
WineMaking:
50% whole cluster. Fermented over ambient yeast fermentation in stainless steel tank. Complete malolactic conversion.
Aging:
Aged for 12 months in used barrels.
Bottling:
Minimal SO2 added at bottling. Neither fined nor filtered.
