Baptiste Lalfert’s interest in winemaking began in his early teens, inspired by a shared bottle of
Sauternes. This early passion led him to pursue a degree in oenology and undertake an
apprenticeship with J-M. Boillot in Burgundy, where he honed his craft and developed a deep
understanding of the winemaking process.
Founded in 2007, Domaine Lalfert is located in the Languedoc wine region within the IGP Pays
d’Hérault, 25 kilometers northwest of Montpellier. Baptiste’s neighbor and mentor (with whom
he is often compared), is the iconic cult winery, Grange des Pères.
The unique terroir, influenced by cool mountain winds that moderate the Mediterranean heat,
creates an ideal microclimate. These winds help stabilize temperatures, promoting the
development of crisp acidity and robust structure in the grapes. This climate is crucial for the
slow ripening of the grapes, enhancing phenolic development and resulting in wines with bright
acidity and balanced flavors—key elements of Baptiste’s winemaking philosophy.
Domaine Lalfert’s vineyards, which include vines up to 75 years old, are farmed organically.
After a meticulous selection process, the grapes—90% Syrah and 10% Cabernet Sauvignon—are
de-stemmed but left uncrushed. Fermentation occurs over a lunar month using ambient yeasts,
with temperatures maintained below 30°C. Daily pigeage is performed to enhance extraction.
Following fermentation, the wine is aged for six months in tanks and then for twelve months in
barrels, allowing it to develop complexity and depth.
Although Domaine Lalfert produces wines in limited quantities, they have achieved significant
acclaim, especially within Michelin-starred restaurants in France. Only a very small portion of
the production is exported, making each bottle a rare and sought-after find.
