Camille SAVÉS

Entering the cuverie at Camille Savès, one is immediately struck by its indefectible state. The floors gleam like mirrors, the chrome and brass fittings on the machinery are impeccably polished, and the ceramic tanks and barrels are spotless. While all wineries must be fastidiously clean to avoid fungal and bacterial contamination, Camille Savès exudes a nearly celestial level of purity. Unsurprisingly, this same aura is expressed in their champagnes, manifesting Savès’ unwavering quest for perfection.

Camille Savès has been crafting exceptional champagnes since 1894. The story began with Eugène Savès, a visionary vigneron who established the estate with a clear focus on producing wines that reflect the unique terroir of Bouzy. His son, Camille, for whom the house is named, continued this legacy, cementing the family’s reputation for excellence in champagne production. Today, the fourth generation, represented by Hervé Savès, upholds the traditions while incorporating modern techniques to enhance the winemaking process.

Bouzy, a celebrated Grand Cru village in the Montagne de Reims, is particularly suited for growing Pinot Noir, which thrives in Bouzy and contributes to the rich, full-bodied character of Savès champagnes. The vineyards, covering approximately 10 hectares, benefit from the region’s chalky soils and favorable climate. The estate also cultivates Chardonnay, adding finesse and elegance to their blends.

At Camille Savès, sustainable viticulture is a core principle. The family employs environmentally friendly practices to maintain the health of the soil and vines. This approach includes minimal use of chemical treatments, cover cropping, and careful management of vine growth to ensure optimal fruit quality.

The winemaking process at Camille Savès combines traditional methods with modern innovations. Harvesting is done by hand to ensure that only the finest grapes are selected. In the cellar, the use of stainless steel tanks and oak barrels allows for precise control over fermentation and aging. The champagnes undergo extended aging on lees, which imparts complexity and depth to the wines.
