Le Brun Servenay

The family vineyards of Domaine LeBrun-Servenay are situated in the heart of the prestigious Côte des Blancs, principally in three Grand Cru villages of Avize, Cramant and Oger, as well as on the surrounding hills. These vines are composed of 80% Chardonnay, 20% Pinot Noir and Pinot Meunier grapes. Soil in the vineyards consists of clay and limestone and vines age reaches 80 years.
Winemaking, which occurs a few kilometres from the cellars in Avize, is a careful process using the latest vinification technologies. All wines are vinified, parcel by parcel, in small 30hL stainless steel vats to add minerality, which is furthered through blockage of malolactic fermentation. Oxidative elements are carefully avoided. Some of the greater vintage wines rest in the cellar for over 25 years. All wines are riddled by hand.
