Bruno Lafon and François Chamboissier have combined their talents to produce this stylish Picpoul de Pinet AOC from a small 2 ha. parcel bordering on the Thau Lagoon near port town of Sète (“Venice of the Languedoc”). The 30 year old vines of Picpoul Blanc grow in sandy limestone-based soil and are trained Cordon de Royat. The agricultural regimen is lutte raisonée and the yield is 50hL/ha. The fruit is picked at night to maintain freshness and is pressed directly before a 20 day fermentation in thermo-regulated (20 C.) stainless steel . The wine is then aged for an additional four months in stainless, with malolactic fermentation blocked in order to preserve crispness and flavor.
