Domaine de la Vougeraie

WHO WE ARE

The Domaine de la Vougeraie was created in 1999 to encompass the finest Burgundy vineyards of the Boisset family.  There are today 42 hectares within 36 appellations, two-thirds in the Côte de Nuits, one-third in the Côte de Beaune. Cultivated according to biodynamic principles, the Domaine is the largest certified organic and biodynamic producer in the Côte d’Or.  

 

The harvest is entirely manual. The Chardonnay is pressed in whole bunches at low pressure, then allowed to settle in stainless steel for 12-24 hours.  The must is then decanted by gravity into barrel for both alcoholic and malolactic fermentation. Depending on the vintage and the appellation, there may be batonnage. The white wines remain in wood, 20-100% new, for an average of 12 months.

 

The Pinot Noir is de-stemmed in varying percentages depending on vintage and appellation. Following 6-8 days of cold maceration, ferments occurs over indigenous yeasts for 6-8 days (some batonnage).  After an additional 10 days of post-fermentation maceration, the grapes are gently pressed and the entirety decanted into barrel, 30-60% new on average, then aged for 12-18 months, then bottled unfined and unfiltered.
